Is there anything more decadent than rich chocolatey fudge brownies? I went a tiny step further, by adding a little bit of Merlot wine to mine. Chocolate and wine, is something I miss, so I had to give it a go. The first bite was so good, I thought I would have trouble limiting myself to the little bar sitting on the plate in front of me. But, they are really really rich, so, it really wasn’t as hard at all, to stop once I finished it. Honestly, I originally cut these into 8 bars, but, could only each half of one. So, in the recipe I changed it to 16 servings.

If you want to put your own spin on these, you can replace the Merlot I used with bourbon, rum, brandy, or even some expresso. If you don’t want to try any of the above, you can replace the alcohol with water, or nut milk. I also used some of the Honest® Chocolate syrup in these. If you don’t have any keto friendly chocolate syrup, you can make your own by mixing cocoa powder, with water and some powdered or liquid keto sweetener. These would also be great with some low carb chocolate chips instead of the nuts.

  • 1/4 cup cocoa powder
  • 2 Tbsp coconut flour
  • 1/2 cup keto sweetener
  • 1/2 cup butter melted
  • 3 Tbsp keto chocolate syrup I use honest brand
  • 5 eggs
  • 1/2 tsp vanilla
  • 2 Tbsp merlot may substitute with bourbon, brandy, or expresso
  • 2 Tbsp water
  • 1 scoop MCT powder optional
  • 1/2 cup chopped nuts optional
  • 4 oz 76% or higher chocolate
  • 2 Tbsp heavy cream
  • 2 tsp powdered or liquid keto sweetener
  1. Preheat oven to 325° F. Grease or spray an 8X8 baking pan.

  2. In mixer bowl add all brownie ingredients except the eggs and chopped nuts and mix well.

  3. Add eggs and blend completely, will be the consistency of cake batter

  4. Pour batter into prepared baking dish and sprinkle chopped nuts over the top.

  5. Bake for 20-30 mins, until center is just set, and brownies are pulling slightly away from the edge of the pan.

  1. Melt chocolate in a microwave safe bowl, between 1 1/2-2 mins. Do not over heat the chocolate, as it will seize. There may be some chocolate that isn't quite melted. That's ok as long as it melts completely as you stir it.

  2. Add cream and sweetener and mix well.

  3. Pour ganache over warm brownies and spread over the entire surface. Allow to cool completely. The ganache will firm up as it cools.

These are rich and fudgey so, a little goes a long way.
