Its My Bread and Butter

My posts are not only going to be a bit fewer due to my class, but, I also had a bit of an accident and injured my hand and wrist. Typing is pretty difficult in the contraption they put on my arm. So, the post part will be pretty brief. But, here goes…

Bread is a carb junkie staple. Is there anything more heavenly than pulling hot bread from the oven and slather butter on it, while its still hot? It’s definitely high on my list of comfort foods. There are many quick and easy microwave breads that are really good, but, I wanted to try my hand at an actual baked bread. I came up with two winners I think. One I used macadamia nuts (lower carbs, higher fat than almonds, but you can make it even easier using almond flour if you wanted to). The second is tree-nut free and though, I used butter, you could easily make it dairy-free using ghee or coconut butter or oil.

Keto Sandwich Bread

Ingredients

  • 1 cup finely ground raw macadamia nuts may substitute almond flour
  • 3 Tbsp finely ground flax seeds
  • 3 Tbsp coconut flour
  • 1/4 cup butter may substitute ghee, coconut butter or oil
  • 6 eggs separated
  • 1/2 tsp cream of tartar
  • 1 Tbsp baking powder
  • 1 scoop MCT powder
  • 1 Tbsp nutritional yeast optional
  • 1/2 Tbsp keto friendly sweetener

Instructions

  1. Preheat oven to 375° F. and prepare a bread pan by spraying or greasing.

  2. In high speed blender or food processor add nuts, flax seeds, coconut flour and all dry ingredients except cream of tartar. Grind to a fine meal, then add butter. Separate egg yolks in blender and put egg whites in to mixer bowl.

  3. Mix until a thick dough forms.

  4. In the meantime add cream of tartar to the egg whites and beat on high until stiff peaks form.

  5. Add blender dough to the egg whites and fold in gently.

  6. Place batter into prepared bread pan and bake about 30 mins or until toothpick to center comes out clean.

Recipe Notes

This bread refrigerates and freezes well.

Ingredients

  • 1 cup sunflower seeds finely ground
  • 3 Tbsp flax seeds finely ground
  • 3 Tbsp coconut flour
  • 6 eggs separated
  • 1/2 tsp cream of tartar
  • 4 Tbsp butter you can use ghee but, add 1/2 tsp sea salt, or for dairy free use coconut oil or coconut butter (again add sea salt)
  • 1 Tbsp baking powder
  • 1 scoop MCT powder
  • 1 Tbsp nutritional yeast optional
  • 1/2 Tbsp keto friendly sweetener

Instructions

  1. Prepare bread pan by spraying with coconut oil (or greasing with butter or coconut oil). Preheat oven to 375° F.

  2. In high speed blender or food processor add sunflower seeds, flax seeds and coconut flour and blend until fine.

  3. in microwave safe dish, melt butter (ghee, or coconut oil).

  4. Add all remaining ingredients except eggs and cream of tartar. Separate whites into mixer bowl, add yolks to bowl with other ingredients.

  5. Mix egg yolk mixture well, will look like a dough ball.

  6. Add cream of tartar to egg whites and beat on high until stiff peaks form.

  7. Add about 1/4 of the egg whites to the other bowl with dough and mix well to loosen dough somewhat.

  8. Gently fold dough into remaining egg whites.

  9. Pour batter into prepared bread pan.

  10. Bake 30-35 mins. or until toothpick to center comes out clean. Cool for about 10 mins before removing from bread pan.

Recipe Notes

This bread keeps pretty well in the refrigerator, also freezes well.

  1. This bread is truly wonderful. It’s the closest bread I’ve made to wheat yeast bread that I’ve tried. We all enjoyed it hot with butter or clarified butter! So happy you posted this
