As every parents hopes for the very best for their children, I am thrilled that our youngest daughter and family are giving the keto lifestyle a go! But, as those of us that are on this journey know, that even armed with the knowledge of how to avoid things like the “keto flu”; realizing how few products you are used to consuming are really any good for you, can be daunting and discouraging.
My daughter put it very well, “I picked up item after item, that I thought were healthy choices only to find out they were full of sugar. I just wanted to sit in the aisle and cry.” I remember feeling much the same way, as I realized that even the most basic things like vegetables, tomato sauces, and condiments were full of sugar, starches, or other undesirable ingredients.
So, I wanted to come up with something, that she would enjoy as a snack, and help through the “suck” phase of keto adaptation. Well, we both loved to eat those flavored coconut chips. So, decided that was what I would come up with (honestly, not sure why I didn’t think of sooner).
So, here is a really yummy low-carb grab and go snack.
Keto Dang-good Coconut Chips
- 4 cups unsweetened flake coconut (large flake is better)
- 2 Tbsp keto friendly maple syrup I used Lakanto brand
- 2 tsp melted coconut oil
Mix all ingredients in a bowl, spread on parchment covered baking sheet or dehydrator trays. Dry on low heat (about 175° F.) for 3-4 hours.
Macros based on approximately a 1/2 cup serving size.
