Better Batter

I read cookbooks, like some people read novels. Even if I don’t try the recipe I read and learn from them. Sometimes, I try something and its ok. But, the texture or flavor reminds me of something completely different; and my brain will go into high gear, and it MUST be tried! lol!

These experiments can lead to wonderful discoveries, or oddities that will never reach the blog, nor be made again; such as a cucumber raspberry pie…don’t ask what possessed! Tasted a bit like raspberry rhubarb, with a watermelon after-taste. It wasn’t a big hit.

But, I was reading a paleo keto cookbook and noticed that the noodle recipe they were using was a bit like my doughnut recipe. So, decided to combine the two recipes into a frosted dessert bundt, to see what happened. It was pretty good, but the texture reminded me of bagels…Sooooo….I made bagels next (makes a decent loaf of bread too, if you want a bread that holds up well and toasts really nicely). Well, the bagels were gone in a day!

I made an everything bagel, but you could easily add a handful of blueberries or cinnamon, or any number of things to make your favorite bagels. I have posted a bagel recipe before, but, these are better to me than the other recipe, also they were quicker to put together.

I made them dairy-free, they are already tree nut free. They do require a couple of ingredients you will probably have to order-oat fiber (make sure you don’t get oat flour or oat bran-its not the same, and glucomannan, also known as konjac root. I purchased both of these online as I couldn’t find them in any of our local shops.

So, I made a batch with blueberries and definitely worth the effort! I added about a cup of frozen blueberries. It changes the per bagel macros to: kcals 83, total fat 4.3 g, net carbs 2 g, and protein 5.8 g

These bagels toast really nicely too. I also, used the batter as a pizza crust, also really good, though you will want to reduce the bake time to about 15-20 mins.

  • 6 eggs
  • 1/4 cup non-dairy milk I used coconut (you can use cream also)
  • 1/4 cup keto friendly sweetener I used Allulose
  • 1 Tbsp baking powder
  • 1/4 cup konjac root powder (glucomannan)
  • 1/4 cup oat fiber (not oat flour)
  • 1/4 cup coconut flour
  • 1 scoop MCT powder
  • 1/2 cup egg white powder can substitute whey protein isolate
  1. Preheat oven to 350° F. Lightly grease bagel pan. In mixer bowl, with whisk attachment add eggs, non-dairy milk (or cream), sweetener, and baking powder

  2. Mix until frothy. Add remaining ingredients

  3. Mix batter until thoroughly blended. You may have to scrape sides. Batter will be thick (add berries or dark chocolate chips, for a twist)

  4. Divide batter evenly into pan. Sprinkle with any toppings you want, for these I used an "everything" topping.

  5. Bake about 25 mins. until bagels are golden.
