Ingredients
Cookies
  • 3/4 cup butter may use ghee or coconut oil-if using coconut oil add 1 tsp salt
  • 1 cup low carb sweetener
  • 1 1/2 cup nut or seed flour I used blanched almond flour
  • 1 Tbsp coconut flour
  • 1/4 cup egg white protein may use whey protein isolate
  • 1 1/2 tsp xanthan or guar gum
  • 1 tsp baking soda
  • 2 Tbsp real vanilla
  • 2 eggs
  • 1 tsp konjac root powder (optional)
Topping
  • 8 oz dark chocolate chips I used Lily's
  • 1 1/2 tsp mint oil I used peppermint
  • 1/2 tsp SweetLeaf Sweet Drops Chocolate Flavoring
Instructions
Cookies
  1. Preheat oven to 325° F. Line cookie sheet with parchment paper or silicone baking mat.

  2. In mixer bowl add butter (ghee or coconut oil and salt) and low carb sweetener and cream until well mixed.

  3. Add remaining cookie ingredients

  4. Mix well starting on low speed and increasing to high, until well mixed cookie dough forms

  5. Using teaspoon or cookie scoop add dough balls to prepared cookie sheet and flatten slightly (dough is a little sticky)

  6. Bake about 14 mins until cookies are cooked through. Place on rack to cool completely before adding topping.

Topping
  1. In double boiler or in microwave safe container melt chocolate chips

  2. Add mint oil and Sweet drops and stir until smooth

  3. Add topping to cookies and allow to sit until topping hardens. You can refrigerate the cookies to harden topping faster
