  • 2 cups unsweetened coconut flakes
  • 1/2 cup unsweetened coconut or nut milk
  • 2 tsp xanthan gum
  • 1/4 cup keto friendly sweetener
  • Toppings: Macaroon coconut or 85% chocolate coating
  1. Place ingredients into food processor and mix on high speed until smooth.
  2. Using cookie scoop or hands, roll into balls and set aside.
  3. If rolling in coconut sprinkle about 1/4 cup of macaroon coconut onto a plate and roll coconut balls until completely covered. The coconut balls will be sticky and soft, so a gentle touch is good here.
  4. If coating with chocolate, melt about 3.5 ounces of 85% or higher chocolate (or use unsweetened baker chocolate and add powdered  keto sweetener), dip each coconut ball (again, gently as these are soft and sticky) and then set on parchment paper to set.
  5. Place truffles in refrigerator until firm.
