Keto Fried Donuts

Ingredients

  • 5 eggs
  • 1/2 cup keto friendly sweetener (I used Allulose)
  • 1 tsp vanilla (you can substitute other flavorings like apple or rum)
  • 1/4 cup nut milk (I used coconut milk)
  • 1 tsp cinnamon optional
  • 1/2 tsp mace optional
  • 1/4 cup Konjac root powder (glucomannon) you may substitute with psyllium husk powder
  • 1/4 cup oat fiber (not oat bran or flour)
  • 1/2 cup egg white protein powder may substitute collagen peptides or whey protein isolate
  • 1/4 cup coconut flour
  • 1 Tbsp baking powder
  • 1 scoop MCT powder optional

Fat for frying

  • Beef Tallow, Lard works best may use coconut oil

Instructions

  1. In mixer bowl add eggs, nut milk, sweetener, vanilla and any spices you will be using and mix until frothy

  2. Add in dry ingredients, adding in the konjac root powder last

  3. Mix on high speed until well blended, may need to scrape sides with a spatula. Batter will be semi-thick and sticky

  4. Melt Tallow (lard or oil) in a small pan (you can use a deep-fat fryer also)

  5. Add batter to a donut dispenser

  6. or simply add to a ziplock with a corner cut (you will want to be careful not to blow out the side, as the batter is pretty thick)

  7. Drop batter into oil once it has heated over 300° F.

  8. Flip donuts once they float to the top (about 2-3 mins)

  9. Remove from oil, dust with powdered sweetener or other sweetener and spice combinations

  10. If making funnel cakes pipe from ziplock bag into oil and proceed as you would with the donuts

  11. Dust with powdered sweetener

Macros are per donut or funnel cake based on a total of 20, adjust accordingly for bigger donuts or funnel cakes
