Keto Monte Cristo Sandwich
- 1 loaf Keto 3-min white bread
- 2 eggs
- 2 Tbsp heavy cream
- 2 slices of turkey
- 2 slices Canadian bacon or ham
- 2 slices Swiss cheese
- 2 slices cheddar cheese
- 2 tsp stone ground dijon or brown mustard
Make bread, cool slightly and slice into at least 4 slices.
Heat a buttered or oiled skillet to medium heat.
In a medium bowl mix eggs and heavy cream. Mix well.
Soak bread slices in the egg mixture.
Place egged bread slices on skillet and brown. Once the bottoms of bread are browned, flip them over.
Layer two slices with turkey and swiss, and the other two slices with Canadian bacon or ham and cheddar. Add a dollop of mustard to each and spread.
Place sandwich sides together and weight with a heavy pan to compact slightly.
Flip second pan over (or use a lid if you have one) and cover sandwiches and cook for another minute or two.
Flip sandwich and recover for another minute or two, until cheeses are melted and sandwiches are golden brown.
