- 1/2 lbs ground sausage Add butter, lard, or bacon grease if using lean sausage
- 1 cup water
- 1 cup heavy cream
- 1 tsp minced garlic
- 2 Tbsp cream cheese or creme fraiche
- 1 tsp xanthan or guar gum
- salt and pepper to taste
Brown sausage on medium high heat, adding butter, lard, or bacon grease as needed.
Add garlic and water and bring up to a simmer.
Add cream cheese (creme fraiche) and stir until melted and blended.
Reduce heat to medium and add cream. Bring back up to a simmer and sprinkle xanthan (guar) gum over the top. Then stir until well blended.
Continue to stir until gravy is thickened, add salt and pepper to taste.
