  • 2 cups nut or seed flour
  • 1/4 cup coconut flour
  • 1/4 cup ground flaxseed
  • 3/4 cup keto friendly sweetener
  • 3 Tbsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1/2 tsp sea salt
  • 3/4 cup butter, ghee or coconut oil
  • 2 Tbsp vanilla
  • 2 Tbsp egg white or whey protein powder
  • 2 eggs
  1. Preheat oven to 325° F. Line cookie sheet with silicone mat or parchments paper.

  2. Add dry ingredients to mixer bowl and mix together on low speed

  3. Melt butter in microwave safe container (about 30 seconds) and add to dry ingredients. Then add vanilla and eggs

  4. Mix on high speed until well blended, dough will be fairly thick

  5. Using teaspoon or cookie scoop, add dough balls to prepared cookie sheet and press down slightly (these don't really spread).

  6. Bake about 14 mins. or until cookies are lightly golden and cooked through. Sprinkle with a little sweetener and cinnamon if desired.
