Keto Spaghetti Squash and Meatballs

Ingredients

  • 1 Small Spaghetti Squash

Meatballs:

  • 1/2 pound ground beef
  • 1/4 cup hemp hearts
  • 1/4 cup Parmesan Cheese
  • 2 eggs
  • 1 Tbsp Italian Seasoning even better if you have fresh herbs
  • 1/2 tsp minced garlic
  • 1/2 tsp sea salt
  • 1/4 tsp pepper
  • 1 Tbsp olive oil

Sauce:

  • 1/2 cup pureed tomatoes for even lower carb option substitute pureed pumpkin
  • 1 Tbsp Italian Seasoning see above
  • 1/2 tsp minced garlic
  • 1/4 cup chopped onion
  • 3 mini sweet peppers
  • 1 cup water
  • salt and pepper to taste

Instructions

  1. Preheat oven to 350. Line baking sheet with parchment paper.
  2. Cut squash longways and brush with olive oil (meat side).
  3. Place face down on parchment and bake for about 45-50 mins.
  4. While squash is baking combine ground beef and all other meatball ingredients into a medium bowl.
  5. Using a fork mix well.
  6. Form meatballs (you will get about 12 golf ball sized meatballs).
  7. Heat olive oil in a heavy skillet to medium high (if oil smokes it’s too high heat) and add meatballs.
  8. Brown on all sides.
  9. Then add sauce ingredients, reduce heat to medium and allow to simmer while squash finished baking and sauce thickens. Add salt and pepper to taste.
  10. Remove squash “noodles” from husk (careful it’s hot!).
  11. Add Sauce and meatballs over the top, serve with some Parmesan Cheese grated over top.
