  • 2 lbs ground meat (I used beef)
  • 2 Tbsp bone broth
  • 1/4 cup gluten free fish sauce
  • 2 cloves garlic minced
  • 1/3 cup green onions finely chopped
  • 2 small shallots finely chopped
  • 2 Tbsp cilantro finely chopped
  • 2 Tbsp pure lime juice
  • 2 Tbsp Thai Chili Sauce (you may use more if you like more kick) (I used Guy Gone Keto brand)
  • salt and pepper to tast
Cucumber Slaw
  • 2 Tbsp fresh mint finely chopped
  • 2 Tbsp Cilantro finely chopped
  • 1 cup cucumbers finely chopped
  • 2 Tbsp pure lime juice
  • salt and pepper to taste
  • 2 leaves Romaine hearts or other lettuce
  1. In a large skillet, over medium high heat add bone broth and fish sauce. Brown ground meat with onion, shallots, garlic, and cilantro

  2. Once meat is browned add Thai Chili Sauce, salt and pepper

  3. Allow meat to simmer for about 15 mins until all liquid has been reduced. In the meantime, chop cucumbers, mint, and cilantro and add to a medium bowl.

  4. Add lime juice, salt and pepper and mix well

  5. Fill lettuce leaf with meat filling, top with cucumber slaw and add some borage or nasturtium flowers for a bit of colorful garnish
