  • 1 cup soft cheese-melted I used Brie but cream cheese works too
  • 2 cups shredded cheese I used mozzarella, but any will work
  • 3 eggs
  • 1/4 cup grated hard cheese I used a mix of asiago, parmesan, and romano
  • 1 1/2 cups ground pork rinds
  • 1 Tbsp baking powder
  • 1 Tbsp Italian herbs dried or fresh finely chopped
  • 1 tsp garlic
  • 8 mozzarella cheese sticks
  1. Preheat oven to 375 degrees. Line a pizza pan or cookie sheet with parchment paper

  2. Grind pork rinds in high speed blender or food processor

  3. Add cheeses to a microwave safe dish and heat on high until cheese is melted (about 1-2 mins)

  4. Add in remaining ingredients and mix thoroughly

  5. Add dough to parchment paper and spread evenly over surface of the pan

  6. push extra dough up around the edges and add cheese sticks. Fold dough gently over the cheese stick

  7. Continue wrapping edges over the cheese sticks until you have it all around the edges

  8. Add your favorite sauce and toppings (don’t forget to add these extras to your total carb count).

  9. Bake about 20-25 mins. Remove from the oven and let it rest about 3-5 mins so the crust sets a bit. This is a bit higher carb than other recipes but is extremely filling!
