Stuffed!

Before I get to the recipe. Have you been to our storefront and seen our line of dry baking mixes? If not, check it out at NoGuiltBaking.com. Our little business has been growing and expanding. We started offering our low-carb, gluten-free, sugar-free baking mixes made in a cottage kitchen. Then, thanks to our wonderful customer base, we moved up into a kitchen incubator (a co-shared kitchen co-op). This week we are growing again and moving into a full catering kitchen! We are now able to offer baked goodies here locally , mostly made from the dry mixes (Lakeland, FL area, so if you are in the area check out the LDDA Lakeland Farmer’s Curbside Market on Saturday from 8-2 Sept-May, then 8-1 June and July).

Our next big step is to raise enough money to purchase a filling machine, that will allow us to produce even more mixes. Thank you to all our wonderful followers and customers that have helped make this happen!! We couldn’t do it without you!!!!

Okay enough about business, on to the recipe!

I am a thin crust pizza girl, but once in a while a soft crust, especially a stuffed crust is a nice change of pace. So for those of you that like a softer crust pizza, this recipe is for you! You can also make some nice stuffed bread sticks using this same recipe.

Ingredients
  • 1 cup soft cheese-melted I used Brie but cream cheese works too
  • 2 cups shredded cheese I used mozzarella, but any will work
  • 3 eggs
  • 1/4 cup grated hard cheese I used a mix of asiago, parmesan, and romano
  • 1 1/2 cups ground pork rinds
  • 1 Tbsp baking powder
  • 1 Tbsp Italian herbs dried or fresh finely chopped
  • 1 tsp garlic
  • 8 mozzarella cheese sticks
Instructions
  1. Preheat oven to 375 degrees. Line a pizza pan or cookie sheet with parchment paper

  2. Grind pork rinds in high speed blender or food processor

  3. Add cheeses to a microwave safe dish and heat on high until cheese is melted (about 1-2 mins)

  4. Add in remaining ingredients and mix thoroughly

  5. Add dough to parchment paper and spread evenly over surface of the pan

  6. push extra dough up around the edges and add cheese sticks. Fold dough gently over the cheese stick

  7. Continue wrapping edges over the cheese sticks until you have it all around the edges

  8. Add your favorite sauce and toppings (don’t forget to add these extras to your total carb count).

  9. Bake about 20-25 mins. Remove from the oven and let it rest about 3-5 mins so the crust sets a bit. This is a bit higher carb than other recipes but is extremely filling!
